Rava uttapam or quick and instant sooji uttapam

How to prepare rava uttapam or quick and instant sooji uttapam recipe:

Method:

Step 1: Mix the rava ( sooji) , curd ( yogurt) and salt in a mixing bowl.
Step 2: Mix well using spoon by gradually adding water ( approx. 1 cup) until batter has thick yet watery consistency ( slightly thicker than dosa batter). Keep it aside for 20 minutes.
Step 3: Mix the chopped veggies ( onion, tomato, chilli) in the batter.
Step 4: Mix well and check again for consistency. If  required add extra water and mix well to make sure that it has thick consistency.
Step 5: Heat a tawa or griddle or a pan and spread some oil. When the tawa is medium hot, reduce flame to low.
Step 6: Now take the batter in a large serving spoon. Pour the batter and spread it gently.
Step 7: Drizzle some oil on the sides and the top.
Step 8: When the base is cooked and lightly browned, Flip the uttapam gently. Cook till the onions and  tomatoes are light golden.
Step 9: Flip and serve rava uttapam hot or warm. Serve uttapam with coconut chutney or coriander chutney or tomato ketchup.
