Bananas muffin recipe

Preparation time: 15 minutes
Cook time: 20 minutes
Total time: 35 minutes
Serves: 12 muffins

Ingredients:

  • 1,1/2 cups all-purpose flour,
  • 1 cup sugar,
  • 1 tbsp baking powder,
  • 1/2 tsp salt,
  • 1 large egg, 
  • 1/3 cup vegetable oil,       
  • 3 medium ripe bananas, mashed,
  • 1 tsp vanilla extract.
     

Method:

Step 1: In a bowl combine all-purpose flour, salt, and baking powder.
       
Step 2: In another bowl, mash the bananas.
Step 3: Add sugar in the mashed bananas bowl and mix it.
     
Step 4: Add egg, oil and vanilla extract and mix well.
Step 5: Stir into the dry ingredients ( all-purpose flour, salt, and baking powder) just until moistened.
   
Step 6: Fill greased or paper-lined muffin cups half full.
Step 7: Bake at 375F for 20 minutes in a preheated oven or until a toothpick inserted near the center comes out clean.
 
Step 8: Cool for 10 minutes, remove from pan and serve.
