Egg curry / Anda curry Recipe

Ingredients:

  • 4 eggs ( boiled and peeled),
  • 2 medium sized onions,
  • 1 tomato,
  • 2 bay leaves,
  • 1 tbsp ginger chopped/ paste,
  • 1 tbsp garlic chopped/ paste,
  • 3-4 green chillies,
  • Salt as per taste,
  • 1 tbsp coriander powder,
  • 1/2 tsp turmeric powder,
  • 1/2 tsp red chili powder,
  • 1/2 tsp garam masala,
  • 1 tbsp coriander leaves chopped.

Method:

Step 1: Cut the eggs into halves or make 1 or 2 light incisions with knife on the eggs.
         
Step 2: Heat 2 tbsp  oil in a pan and fry the eggs from all sides until it turns slightly golden.
    
Step 3: Now remove eggs from the flame and keep it aside.
    
Step 4: Heat 2 tbsp oil in the pan and add  bay leaves.
      
Step 5: Add chopped onions in the pan and fry till it's changes to translucent.
   
Step 6: Now add chopped or paste of ginger, garlic and green chillies and cook for a minute or until its raw smell is gone.
Step 7: After that add chopped or purée of tomato and cook for few seconds.
    
Step 8: Now add all the spices, coriander powder, red chili powder, garam masala, turmeric powder, salt and mix it. Cook the masala until its start leaving oil.
 
Step 9: When the masala is properly cooked, add 1 cup of water into it and cover it. Let it cook on medium flame for 2-3 minutes.
 
Step 10: Now add eggs into it and cook for 1 minute.
Step 11: Egg curry is ready to serve. Switch off the flame and garnish with some chopped coriander leaves. Serve warm with roti or rice.
