Rice kheer recipe

Preparation time: 30 minutes
Cook time: 45 minutes
Total time: 75 minutes
Serve: 4

Ingredients:

  • 3/4 cup rice,
  • 1 litre full fat milk,
  • 6 tbsp sugar / as required,
  • 5-6 green cardamom powder ( choti elaichi powder)
  • 10-12 almond blanched and sliced,
  • 10-12 cashews ( kaju).
      

Method: 

Step 1: Rinse the rice with water and soak in enough water for 30 minutes.
Step 2: Heat milk and let it come to boil.
   
Step 3: Drain the rice and keep it aside.
Step 4: Reduce the flame and add the rice.
Step 5: Stir and simmer the milk and let the rice grains cook.
Step 6: Cooking of rice in the milk takes about approx 35-40 minutes on low flame. Stir it at regular intervals.
Step 7: Add the sugar and stir continuously so that no lumps are formed.
Step 8: Scrape the sides of the pan and add dried side milk into the pan.
  
Step 9: Now add almonds,cashews and cardamom powder.
Step 10: Cook further till the rice grains are completely cooked and kheer is thicken by then.
Step 11: Switch off the flame and serve the kheer hot or warm or cold by refrigerating it.
