Aalu paratha

Ingredients: 

For stuffing:

  • 2 medium sized boiled potatoes and mashed,                           
  • 1/2 tbsp finely chopped green chili,
  • 1 medium sized onion,
  • 1 tsp grated ginger,
  • 1 tsp grated garlic,
  • Salt as per taste,
  • 1/2 tsp turmeric powder,  
  • 1/4 tsp garam masala,
  • 1/2 tsp coriander powder,
  • 1/2 tsp cumin seeds,

For dough:

  • 2 cup wheat flour,
  • 1/4 tsp salt,
  • 1/2 tsp oil,
  • Water as required, 

For frying: 

  • Oil/ ghee as required.
                       
     

Method:

Step 1: In a mixing bowl, mix the flour with salt and oil.
 
Step 2: Add water and knead to a smooth and soft dough.
               

Step 3: Cover the dough and let it rest for 15 minutes.
Step 4: Heat oil in a pan, add cumin seeds into it.
Step 5: Add finely chopped onions and fry for 2 minutes.
             
Step 6: Add ginger,  garlic into it and cook for few sec and then add green chilies.
Step 7: Now add all spices- coriander powder, turmeric powder, garam masala, salt, and sautée for few seconds.
           
Step 8: Add mashed potatoes into it. Mix it properly and cook for 1 minute. Now stuffing is ready, let it cool.
Step 9: After 15 minutes knead the dough again to make it smooth.
Step 10: Take a medium sized dough ball and make a bowl shape from that dough.
         
Step 11: Place few tsp of the filling in the dough bowl. Keep in mind that the filling should not be too less or too much.
Step 12: Seal the stuffing into the dough by bringing the dough ends together.
       
Step 13: Sprinkle some flour on the dough and roll the aalu paratha gently.
Step 14: Place the stuffed paratha on a hot tawa.
    
Step 15: When one side has slightly browned flip the paratha. Spread / brush some oil on the browned side.
Step 16: Flip again and brush oil on the other side.
  
Step 17: Flip once/ twice, till you see golden spots on the paratha. Paratha is ready to serve.
Step 18: Serve paratha hot with yogurt and pickles.
