Ingredients:
- 250gms baigan(brinjal),
- 2 tsp whole fennel seeds ( saunf),
- 1tsp ajwain seeds,
- 1tsp fenugreek seeds ( methi),
- 1tsp nigella seeds/ onion seeds,
- 2tsp yellow mustard,
- Salt to taste,
- 1/4 tsp turmeric powder,
- 1/4 tsp red chili powder,
- 2 tsp coriander powder,
- 1 tsp amchoor powder,
- 4tsp oil.
Method:
Step 1: Roast saunf, ajwain, fenugreek seeds, onion seeds, mustard in a hot frying pan, till u start smelling the aroma. Let it cool for 5 minutes and grind it. Your kalonji masala is ready, keep it aside.
Step 2: Wash the brinjals thoroughly with water.
Step 3: Mix salt, turmeric powder, red chili powder, amchoor powder, coriander powder, kalonji masala, 2tsp oil in a bowl. Mix all the ingredients well. Your masala is ready for stuffing.
Step 10: Check with a pointed knife if cooked throughly, take off the pan and serve hot or at room temperature. You can also refrigerate it for later use.

Step 4: Slit each one of the brinjals.
Step 5: Stuff 1.5 tsp of masala paste into each brinjal.
Step 6: Heat 2 tbsp of oil in a frying pan.
Step 7: Arrange all the stuffed brinjals into frying pan.
Step 8: Cover and cook for about 5 minutes on one side of brinjal.
Step 9: Turn and cook for another 5 minutes on the other side as well. Cook properly from all sides.
Step 10: Check with pointed knife if cooked throughly, take off the pan and serve hot or at room temperature. You can also refrigerate it for later use.
