Baigan pakoda recipe

Ingredients:

  • 1 large / 5-6 small baigan ( brinjal/ eggplant),
  • 1 cup besan,
  • 1/4 tsp turmeric powder,
  • 1/4 tsp red chili powder,
  • 1/2 tsp ajwain/ carom seeds,
  • 2/3 cup water / as required,
  • Salt as required,
  • Oil for deep frying.

Method: 

Step 1: In a mixing bowl, mix all the dry ingredients- besan, turmeric powder, red chili powder, ajwain, and salt.
  
Step 2: Add water and whisk to a smooth batter without any lumps. Add water as required to make a medium consistency batter.
       
Step 3: Rinse and slice the baigan into thin slices.
 
Step 4: Heat the oil for frying the pakoras.
 
Step 5: Dip the baigan slices in the batter evenly.
  
Step 6: Gently place them in medium hot oil for frying.
   
Step 7: Turn over when one side is cooked partly.
Step 8: After a minute flip again and fry the baigan pakora as till crisp and evenly golden.
Step 9: Remove pakora and drain excess oil.
Step 10: Place the pakora on a paper kitchen towel to remove excess oil. Fry the pakoras in batches like the above.
Step 11: Sprinkle some chaat masala over the pakoras and serve hot or warm with coriander chutney or tomato ketchup.
