Sweet corn curry/ corn capsicum masala recipe

Cook time: 20 minutes
Total time: 35 minutes
Serves: 3-4

Ingredients:

  • 1 cup Sweet corn kernels boiled,
  • 1 medium sized Capsicum, chopped,
  • 2 medium sized Onion,
  • 1 tbsp Ginger grated or paste,
  • 1 tbsp Garlic chopped or paste, 
  • 2 green chilies, chopped,          
  • 1 medium sized Tomato,purée,
  • 2 tbsp Fresh cream,
  • 1 tbsp Kasuri methi,
  • 1 tbsp oil,
  • 1 tsp cumin seeds,
  • 1 tsp red chili powder, 
  • 2 tsp coriander powder, 
  • 1/2 tsp turmeric powder,
  • 1 tsp garam masala, 
  • Salt as per taste,
  • 1 cup water.

Method:

Step 1: Boil the corn kernels and keep it aside.
Step 2: In a pan heat oil and add cumin seeds.
          
Step 3: Add chopped onions and cook for about 2 minutes or until they become translucent.
Step 4: Add ginger, green chilies, and garlic and cook till the raw flavor goes off.
       
Step 5: Now add tomato purée and cook for 2 minutes.
Step 6: Add dry spices- coriander powder, turmeric powder, red chili powder, garam masala and salt and mix it.
     
Step 7: Cook till all the spices blends well with the gravy.
Step 8: Add diced capsicum and water, close the lid and cook for 5 minutes till the capsicum is softens.
Step 9: Add boiled corn kernels and stir it.
   
Step 10: Then add Kasuri methi and mix it.
Step 11: Add fresh cream and cook for 2-3 minutes, sabzi is ready.
 
Step 12: Garnish with fresh coriander leaves and serve hot with roti, paratha or naan.
